Fusilli with eggplant, tomato and basil
Another Rachel Roddy reecipe, another recipe I only followed halfway. Was too broke to buy fresh tomatoes when we had mom's tomato sauce in the freezer; dreams of trying ricotta salata one day.
I made this with fusilli because it had been some time since I last had it, but it wasn't the right choice -- the grooves would never be big enough for the eggplant, even if we cut it in very small dice.
